1 (12-ounce) bag of fresh cranberries, cleaned
1 3/4 cups sugar
1 Granny Smith apple ( green is important for congealing),
peeled, cored, and chopped
juice of one orange
juice of one lemon
3/4 cup raisins
3/4 cup chopped walnuts or pecans
Mix sugar with 1 cup of water in a medium saucepan on low heat and
stir to dissolve sugar. Bring to a boil and add cranberries over low heat
for about 5 minutes, or until the skins pop open stirring occasionally.
Add the apple, zests, and juices and cook for 15 more minutes still stirring occasionally.
Remove from the heat and add the raisins and nuts.
Let cool to room temperature then refrigerate and serve chilled.
