CHICKEN PILAU

Ingredients:
  4lb but less than 5 lb stewing hen.
 
1 green pepper, chopped
  1 onion, chopped
 
2 tbsp olive oil
 
1 32oz can diced tomatoes
 
1 cup rice
 
2 cup liquid (One cup of chicken stock and one cup of juice from drained tomatoes)
  2 to 3 datil pepper, seeded
 
½ tsp thyme leaves or 2-3 bay leaves
 
½ tsp marjoram leaves
 
¼ tsp black pepper

Stewing hen, cooked until tender about 1½ hr.; save one cup of stock.
Bone, lightly salt 
You can stop here and start again tomorrow.

Sauté chop onion & green pepper in olive oil.
Add drained diced tomatoes and reserve 1 cup of liquid

Add:
   cut-up chicken
  datil
   ½ tsp thyme
   ½ tsp marjoram
  ¼ tsp black pepper

Stir.

Add:
  one cup rice
   two cups liquid (I use one cup chicken stock and one cup tomatoes)

Stir and cover.
Cook on low for about 25 min stirring occasionally.
 Check to see how dry the mixture is.
 Cook longer if necessary
